Sam's Favourite Mediterranean Salad Recipe

Start with a large bowl full of salad greens such as young english spinach, curly endive, butter lettuce etc dressed in balsamic vinegar and olive oil. Add 2-3 roasted capsicums, cut up, a jar of anchovy stuffed green olives and approx 50g of lightly toasted pine nuts. Add salt and pepper to taste. Mix well.
