Sam's Rocky Road Recipe

400g milk chocolate
100g marshmallows (preferably small baking variety)
100g glace cherries -(confectionery rather than real)
100g slivered almonds


Line a square cake tin with alfoil or baking paper.

Heat oven to around 180c, spread almonds in a thin even layer on a baking tray and toast in oven for 5 to 10 minutes (keep checking to ensure they don't burn). Once out of the oven transfer to cake tin so they don't continue cooking on tray.

Cut cherries in half, then place cherries and marshmallows in tin with the almonds.

Break the chocolate into small pieces and place in a separate bowl. Microwave for 10 seconds, then stir - repeat as many times as needed till chocolate melted (I find this takes about 1 minute if chocolate is already at room temperature, 2 minutes straight from the fridge). Keep to 10 second intervals and you are unlikely to burn the chocolate.

Poor chocolate over other ingredients in tin, and mix together with a spatula or wooden spoon.

Refrigerate until set (up to 2 hours).

Turn-out of tray and slice. EAT and ENJOY!
