Serves 4 - 6
6 red or golden beetroot, peeled
Green tops from the beetroot
1 tbs extra virgin olive oil
2 firm ripe avocados
Dressing:
1 tbs white wine vinegar
1 small leek finely sliced
1 tbs lemon juice
Juice from one small mandarin
Pinch of caster sugar
3/4 cup extra virgin olive oil
Very thinly slice beetroot and douse with the red wine vinegar and extra virgin olive oil. Cover and leave to marinate for at least 10 minutes.
For the dressing combine the vinegar, leek, lemon juice, mandarin juice and a pinch of sugar in a bowl, then set aside to macerate for 15 minutes. Then whisk oil into the vinegar mixture, season with salt & pepper.
Drain beetroot of any excess vinegar, then rinse in cold water. Arrange greens on a plate, then top with slice beetroot and thinly sliced avocado and drizzle with dressing.
