"Meatballs for the Convent" Recipe

Meatballs:
500g steak, chopped or minced
1 egg
1/2 cup chopped pancetta
1 or 2 cloves garlic
salt, pepper, coriander seeds - 1 teaspoon of each
sage, basil, rosemary chopped finely - 1 heaped teaspoon of each
oil for frying
flour for dredging

Sauce:
1 tablespoon bitter orange juice (seville or marmalade oranges - lemon juice is the best substitute if you can't get bitter oranges)
1/2 cup beef stock

Pound all the ingredients together and form into little balls the size of walnuts, roll in flour and fry in oil. When nicely browned add stock and bitter orange juice. Simmer until all the liquid is absorbed.
